Ingredients

Scale

Cookie Dough

  • 1/2 cup smooth peanut butter
  • 1/2 cup butter (softened)
  • 1/2 cup brown sugar
  • 1/3 cup granulated sugar
  • 1 egg (at room temperature)
  • 1/2 tsp vanilla extract
  • 1 & 1/3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp corn starch
  • 1/4 tsp salt

Toppings and Decoration

  • 9 white chocolate peanut butter cups
  • 2/3 cup white chocolate chips (melted)
  • 3 tablespoons black candy melts or semi-sweet chocolate chips (melted)
  • 1 tablespoon orange candy melts (melted)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This will prevent the cookies from sticking and ensure even baking.
  2. Cream Ingredients: In a mixing bowl, cream together the softened butter, smooth peanut butter, brown sugar, and granulated sugar until light and fluffy. Then, add the egg and vanilla extract and mix until fully combined.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, corn starch, and salt. Gradually add this mixture to the wet ingredients and mix just until the flour is incorporated and no dry streaks remain.
  4. Shape and Bake Cookies: Using a large cookie scoop, portion out nine equally sized dough balls onto the prepared baking sheet. Gently flatten each dough ball to about 3/4 inch thickness. Bake in the preheated oven for 9 minutes until set but still soft.
  5. Add Peanut Butter Cups: Remove the cookies from the oven and while still warm, unwrapped one white chocolate peanut butter cup per cookie and place it upside down on top of each one, pressing gently so it sinks slightly into the cookie.
  6. Melt White Chocolate Chips: Place the white chocolate chips in a microwave-safe bowl and heat in 30-second intervals, stirring in between, until smooth and fully melted.
  7. Pour White Chocolate: Spoon 1-2 tablespoons of melted white chocolate over each cookie, spreading it evenly across the top to cover the peanut butter cup.
  8. Spread Chocolate Evenly: Carefully hold the baking sheet with oven mitts and gently tap it up and down on the countertop to help the melted white chocolate spread evenly, creating the signature melted snowman look.
  9. Decorate with Candy Melts: Melt the black candy melts (or semi-sweet chocolate chips) and orange candy melts in the microwave in 15-30 second increments, stirring until smooth. Transfer the melted black chocolate to a piping bag or ziplock bag with a small snip at the tip and pipe eyes, a smile, and buttons on each cookie. Use the orange candy melts similarly to pipe a small carrot-shaped nose. Allow the decorations to set completely before serving.

Notes

  • You can substitute black candy melts with melted semi-sweet chocolate chips if preferred.
  • Make sure the peanut butter cups are placed upside down to create the snowman face effect.
  • Use parchment paper on the baking sheet for easy cleanup and to prevent sticking.
  • Allow the melted chocolate decorations to fully set by keeping the cookies at room temperature or chilling briefly before serving.
  • For best results, use room temperature butter and eggs to ensure proper mixing and texture.
