Ingredients

Scale

Cookies

  • 2 large egg yolks
  • 1/4 tsp fine salt
  • 1 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 8 tbsp unsalted butter (room temperature)
  • 35 drops green food gel coloring (Wilton gel food coloring recommended)
  • 2/3 cup granulated sugar

Decoration

  • 12 red heart sprinkles (for the Grinch’s heart)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a small baking sheet with parchment paper or use a silicone baking mat to prevent the cookies from sticking.
  2. Prepare Butter Mixture: Melt the unsalted butter in a mixing bowl using the microwave. Stir in the granulated sugar, egg yolks, vanilla extract, and 3 drops of green gel food coloring until fully combined and evenly colored. Add more green gel for a deeper color if desired.
  3. Add Dry Ingredients: Evenly sprinkle the flour, baking soda, and salt over the green butter mixture. Stir gently until just combined, careful not to overmix to maintain soft cookie texture.
  4. Shape Dough: Press the dough flat in the bowl, then divide it in half. Shape each half into 6 dough balls (total of 12). Optionally, roll the dough balls lightly in extra granulated sugar for added sparkle and crunch.
  5. Arrange and Bake: Place the dough balls evenly spaced on the prepared baking sheet. Bake in the preheated oven for 10 to 11 minutes, until the cookies have spread, crackle on top, and appear dry.
  6. Add Sprinkles: Immediately after baking, press a single red heart sprinkle into the top of each warm cookie so it adheres well.
  7. Cool: Let the cookies rest on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely. Serve once cooled.

Notes

  • Use gel food coloring for more vibrant and intense green color without affecting dough consistency.
  • Do not overmix the dough after adding dry ingredients to ensure soft, tender cookies.
  • Keep a close eye on the cookies near the end of baking to prevent overbaking and maintain softness.
  • Rolling the dough balls in sugar before baking adds a light crunch and sparkle to the cookie surface.
  • Press heart sprinkles onto warm cookies so they stick properly as they cool.
