Ingredients

Scale

Meat & Protein

  • 1 tablespoon olive oil
  • 1 13.5 ounce package andouille sausage, sliced into 1/4-inch rounds

Vegetables

  • 4 russet potatoes, peeled and cut into bite-sized pieces
  • 1 cup diced bell pepper (red or green)
  • 1 cup onion, diced
  • 1/2 cup diced celery
  • 1/2 cup sliced carrots
  • 1 tablespoon minced garlic

Seasonings & Liquids

  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 cups chicken broth
  • 1 cup milk
  • 1/2 cup whipping cream

Dairy & Garnishes

  • 1 cup cheddar cheese, shredded
  • Green onions, sliced for serving
  • Tabasco sauce, for serving

Instructions

  1. Brown the sausage: Heat the olive oil in a pan over medium heat and brown the sliced andouille sausage on both sides until nicely caramelized, about 4-5 minutes. This step adds flavor and texture to the sausage.
  2. Add ingredients to slow cooker: Transfer the browned sausage to the slow cooker. Add the peeled and chopped potatoes, diced bell pepper, onion, celery, sliced carrots, minced garlic, Cajun seasoning, salt, and black pepper. Mix everything well to combine the flavors.
  3. Cook with broth: Pour the chicken broth over the meat and vegetables in the slow cooker. Stir to ensure all ingredients are submerged and evenly mixed. Cook on high for 3 hours or on low for 5 hours, until the potatoes and vegetables are tender.
  4. Add milk and continue cooking: Stir in the milk and continue cooking for an additional hour to allow the flavors to meld and the soup to thicken slightly.
  5. Add cream and cheese: Pour in the whipping cream and shredded cheddar cheese, stirring gently. Cook for about 15 minutes more, or until the cheese has fully melted and the soup is rich and creamy.
  6. Serve: Ladle the soup into bowls and garnish with sliced green onions and a dash of Tabasco sauce for added heat and freshness. Enjoy your comforting Cajun potato soup!

Notes

  • For a thicker soup, mash some of the potatoes against the side of the slow cooker before adding the cream and cheese.
  • If you prefer a spicier kick, increase the Cajun seasoning or add more Tabasco sauce to taste.
  • Use low-fat milk and cream if you want to reduce fat content without sacrificing creaminess.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stove.
