Salmon Patty Mixture

  • 4 cloves garlic (minced)
  • 1 tablespoon minced fresh ginger
  • 1 lime (zested)
  • 1/2 lime (juiced)
  • 1 small red onion (finely diced)
  • 1/2 cup fresh cilantro (finely chopped)
  • 1/4 cup fresh mint (finely chopped)
  • 3 green onions (chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup panko breadcrumbs

Crusting Mixture

  • 1/2 cup panko breadcrumbs
  • 2 tablespoons white sesame seeds
  • 2 tablespoons black sesame seeds
  • 2 tablespoons oil (for frying)

Instructions

  1. Prepare the Salmon: Remove any skin and bones from the salmon fillets. Finely chop the salmon into small pieces and place in a large bowl. Line a large baking sheet with parchment paper and set aside.
  2. Make the Patty Mixture: In a separate bowl, combine mayonnaise, soy sauce, fish sauce, sambal oelek, minced garlic, minced ginger, lime zest and juice, diced red onion, chopped cilantro, mint, green onions, salt, pepper, and 1 cup of panko breadcrumbs. Mix gently to combine.
  3. Combine Salmon and Mixture: Add the chopped salmon to the breadcrumb and sauce mixture. Mix thoroughly using your hands for best results until evenly incorporated.
  4. Form Patties and Chill: Divide the salmon mixture into approximately 6-7 patties. Place each patty on the prepared baking sheet. Refrigerate for at least 2 hours to set.
  5. Prepare Sesame Crust: In a shallow wide bowl, mix the remaining 1/2 cup panko breadcrumbs with the white and black sesame seeds.
  6. Coat Patties: Heat 2 tablespoons of oil in a large skillet over medium-high heat. Press each chilled patty gently but thoroughly into the sesame-panko mixture, coating all sides and corners.
  7. Cook Patties: When the oil is hot and shimmering, carefully place 3 patties in the skillet. Reduce heat to medium and cook for 4 minutes. Flip and continue cooking for another 4-5 minutes, or until the internal temperature reaches 145°F and patties are cooked through. Remove and repeat with remaining patties.
