Filling Ingredients

  • 3 tbsp ghee or butter
  • 1 medium onion, finely chopped
  • 1 jalapeño pepper, finely chopped
  • 3 cloves garlic, minced
  • 1 lb ground chicken or turkey
  • 2 tbsp garam masala or curry powder
  • 1/2 tsp turmeric
  • Salt to taste (approx. 1 1/2 tsp + extra for seasoning)
  • 1 1/2 lbs potatoes (about 2 medium russet), diced
  • 1 cup water
  • 1 cup green peas, frozen or fresh
  • 1/2 cup minced fresh cilantro

Pie Crust

  • 1 sheet puff pastry (thawed, half of a 17-oz package) or 1 single pie crust

Instructions

  1. Caramelize Onions: Heat the ghee or butter in a large stockpot over medium heat. Add the finely chopped onion and cook until golden and caramelized, about 20 minutes, stirring occasionally to prevent burning.
  2. Add Jalapeño and Garlic: Stir in the finely chopped jalapeño and minced garlic, cooking for an additional 1 minute until fragrant.
  3. Cook Chicken with Spices: Add the ground chicken, garam masala, turmeric, and 1 1/2 teaspoons salt to the pot. Cook, breaking up the meat, until the chicken is no longer pink and fully cooked through.
  4. Simmer Potatoes: Stir in the diced potatoes and water. Cover the pot and cook over medium heat, stirring occasionally, for about 25 minutes or until the potatoes are tender.
  5. Add Peas and Cilantro: Stir in the green peas and minced cilantro. Taste the filling and adjust the seasoning, adding more salt if needed.
  6. Assemble the Pie: Transfer the filling mixture to a 2-quart (2-liter) baking dish. Roll out the puff pastry sheet and place it over the top of the filling. Cut a few steam vents in the pastry to allow steam to escape during baking.
  7. Bake: Preheat the oven to 400°F (200°C). Bake the pie until the pastry crust is golden brown and crisp, about 25 minutes. Remove from oven and let cool slightly before serving.

Notes

  • You can substitute ground turkey or even ground lamb for the chicken if preferred.
  • Use frozen peas if fresh are not available; just make sure they are thawed before stirring in.
  • For a vegetarian version, substitute ground meat with lentils or crumbled paneer (not included in original recipe).
  • Make sure to cut steam vents in the pastry to avoid sogginess and help crisp the crust.
  • Leftover pie can be refrigerated for up to 3 days and reheated in the oven for best results.
