This no-oven, no-rest bread recipe yields soft, golden flatbreads cooked quickly on the stovetop. Made with simple pantry ingredients like flour, baking powder, salt, and water, these flatbreads are perfect for an easy, homemade bread alternative that requires no waiting time for rising or baking.

Ingredients

Scale

Dry Ingredients

  • 400 g de farine (flour)
  • 1/2 sachet de levure chimique (baking powder)
  • 1 c. à café de sel (1 teaspoon salt)

Wet Ingredients

  • 22 cl d’eau tiède (220 ml lukewarm water)

For Cooking

  • Huile pour la cuisson (oil for cooking)

Instructions

  1. Mix dry ingredients: In a large bowl, combine the flour and baking powder thoroughly. Add the salt and mix evenly to ensure the leavening and salt are well distributed.
  2. Incorporate water: Gradually pour in the lukewarm water while stirring continuously until the dough comes together into a soft, smooth, and elastic ball. Adjust by adding a little flour or water if needed to get the right consistency.
  3. Shape the dough: Divide the dough into several portions about the size of a small mandarin orange, then flatten each portion into a flat disc or galette-shaped flatbread.
  4. Preheat pan with oil: Heat a skillet or frying pan over medium heat and add a small amount of oil to coat the surface.
  5. Cook first side: Place the flattened dough pieces in the hot pan and cook for approximately 3 minutes until the bottom surface turns golden brown.
  6. Cook second side: Flip the breads and continue cooking for another 2 to 3 minutes until the other side is also golden and the bread is cooked through.
  7. Drain and serve: Remove the breads from the pan and place them on paper towels to absorb any excess oil. Serve warm for best flavor and texture.

Notes

  • Ensure the water is lukewarm to help the baking powder react slightly and aid in lightness.
  • You can adjust the thickness of the flatbreads by flattening the dough thinner or thicker based on preference.
  • Use a non-stick pan to reduce the amount of oil needed for cooking.
  • Consume the breads fresh for optimal softness; reheating can be done briefly in a pan or microwave.
