Ingredients

Scale

Chocolate Mixture

  • 2 cups semi-sweet chocolate chips (divided)
  • 1 1/2 cups milk chocolate chips
  • 3 tablespoons butter
  • 14 ounces sweetened condensed milk
  • 4 packages hot chocolate mix (about 1/2 cup)
  • 2 teaspoons vanilla extract

Marshmallow and Garnish

  • 4 cups marshmallows (divided)
  • About 1/2 cup peppermint candy canes or crushed peppermints for garnish

Instructions

  1. Prepare the Pan: Line an 8×8-inch pan with foil or parchment paper and spray it lightly with cooking spray to prevent sticking.
  2. Melt Chocolate Mixture: In a double boiler, combine 1 1/2 cups semi-sweet chocolate chips, 1 1/2 cups milk chocolate chips, butter, sweetened condensed milk, and hot chocolate mix. Stir continuously over medium heat until the mixture is melted and smooth.
  3. Add Marshmallows: Fold in 2 cups of marshmallows and stir for about 1 minute until they’re partially melted and incorporated.
  4. Add Vanilla: Remove the mixture from heat and stir in 2 teaspoons of vanilla extract thoroughly.
  5. Transfer and Top: Pour the fudge mixture into the prepared pan and press the remaining 2 cups of marshmallows evenly over the top.
  6. Chill: Refrigerate the fudge for at least 4 hours until fully set.
  7. Cut Fudge: Once chilled, cut the fudge into squares of your preferred size.
  8. Melt Remaining Chocolate: Heat the remaining 1/2 cup semi-sweet chocolate chips in the microwave in 30-second intervals, stirring in between until melted and smooth.
  9. Drizzle and Garnish: Drizzle the melted chocolate over the fudge squares and sprinkle crushed peppermint candy or candy cane pieces on top. Allow to cool completely before serving.

Notes

  • Use a double boiler or a heatproof bowl over simmering water to avoid burning the chocolate.
  • If you don’t have a double boiler, gently melt the chocolate in the microwave in short intervals, stirring frequently.
  • For extra peppermint flavor, you can add a few drops of peppermint extract to the fudge mixture.
  • Store the fudge in an airtight container in the refrigerator for up to two weeks.
  • Make sure to fully cool the fudge before cutting to ensure clean squares.
