Ingredients

Scale

Dry Ingredients

  • 1 cup rolled oats
  • ½ cup mixed nuts (cashews, almonds, walnuts), roughly chopped
  • ¼ cup pumpkin seeds
  • 2 tbsp chia seeds
  • 2 tbsp flaxseeds
  • ½ cup dried cranberries (or raisins)
  • ½ tsp cinnamon
  • Pinch of salt

Wet Ingredients

  • ¼ cup natural peanut butter or almond butter
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, chopped nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries (or raisins), cinnamon, and a pinch of salt. Stir well to evenly distribute all elements.
  3. Melt Wet Ingredients: In a small saucepan over low heat, gently melt the natural peanut butter and honey until the mixture is smooth and combined. Remove from heat and stir in vanilla extract for added flavor.
  4. Combine Wet and Dry Mixtures: Pour the melted peanut butter and honey mixture over the dry ingredients. Mix thoroughly until all the dry ingredients are evenly coated and stick together.
  5. Shape Cookies: Scoop out portions of the cookie dough onto the prepared baking sheet and flatten each ball slightly with your fingers or the back of a spoon to shape the cookies.
  6. Bake: Bake in the preheated oven for 12 to 15 minutes until the cookies turn golden brown around the edges.
  7. Cool: Allow the cookies to cool completely on the baking sheet before transferring them to a wire rack or container. This helps them set and maintain their shape.

Notes

  • You can substitute dried cranberries with raisins or other dried fruits for variety.
  • For a nut-free version, replace nuts and nut butter with seed butter and additional seeds.
  • Store cookies in an airtight container to keep them fresh for up to a week.
  • If you prefer a vegan option, use maple syrup instead of honey.
  • Make sure to flatten the cookies before baking for even cooking.
