  • ½ tsp sea salt (more or less to taste)
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha (adjust to spice preference)
  • 1 tsp rice vinegar
  • 2 tsp honey

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Adjust the heat by adding more sriracha or balance sweetness by increasing honey or sweet chili sauce. Chill the sauce until ready to serve.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Once hot and shimmering, add ground turkey and break it into small pieces with a spatula. Cook, stirring occasionally, until turkey is browned and reaches an internal temperature of 165°F (74°C).
  3. Add Seasonings and Simmer: Lower heat to medium-low. Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Simmer the mixture for 2-3 minutes, stirring occasionally to blend flavors.
  4. Thicken Mixture: Sprinkle corn starch evenly over the turkey mixture and stir thoroughly to combine. This will help thicken the sauce. Optionally stir in about 2 tablespoons of bang bang sauce to infuse extra flavor before serving.

Assemble Bowls: Arrange cooked rice in bowls and top with shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado slices, shredded cabbage, and the warm ground turkey mixture.
