Dough
- 4 1/2 tablespoons (60 g) unsalted butter
- 2 tablespoons minced garlic
- 3 1/2 cups + 1 tablespoon (434 g) all-purpose flour, see notes for measuring
- 3 tablespoons chopped fresh parsley
- 1 tablespoon (15 g) granulated sugar
- 2 1/4 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1 cup (225 g) whole or 2% milk, warmed to 110°F
- 1 large egg, room temperature
- 1 beaten egg, for brushing the tops
Garlic Butter Topping
- 2 tablespoons (28 g) unsalted butter
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh parsley
- Flaky sea salt, for finishing (optional)
- Prepare Pan: Lightly butter the bottom and sides of a 9×13 inch baking pan and set aside.
- Make Garlic Butter for Dough: In a small pot, melt 4 1/2 tablespoons unsalted butter and add 2 tablespoons minced garlic. Cook for 1-2 minutes until fragrant, then remove from heat to cool while preparing other ingredients.
- Mix and Knead Dough: In a stand mixer bowl, combine flour, chopped parsley, sugar, instant yeast, and salt. Add warmed milk, one large room-temperature egg, and the cooled garlic butter mixture. Using the dough hook on low speed, knead for 10-12 minutes until a smooth, soft, and tacky dough forms. If too sticky, add flour tablespoon by tablespoon until workable.
- Shape Rolls: Divide dough into 12 equal portions (about 67 grams each). Shape each into smooth balls, pinching the seam at the bottom to keep tight. Place balls into the prepared pan.
- First Rise: Cover the pan with plastic wrap or a clean kitchen towel. Place in a warm spot and let the dough rise until doubled, about 1-2 hours.
- Preheat Oven: Set your oven to 350°F (180°C) to preheat while the dough finishes rising.
- Apply Egg Wash and Bake: Brush the tops of the risen rolls with the beaten egg. Bake for 20-30 minutes until golden brown on top.
- Prepare Garlic Butter Topping: While baking, melt 2 tablespoons unsalted butter in a pot with 1 tablespoon minced garlic. Cook 1-2 minutes until fragrant, then remove from heat and stir in chopped parsley.
- Finish and Serve: When rolls come out of the oven, immediately brush them generously with the garlic butter mixture. Sprinkle flaky sea salt over the tops if desired and serve warm.
