Ingredients

Scale

Seafood Stuffing

  • 120 g lump crab meat
  • 120 g cooked shrimp, chopped
  • 60 g cream cheese, softened
  • 30 g breadcrumbs
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Salmon Fillets

  • 4 skinless salmon fillets (170 g each)
  • 1/2 teaspoon salt (for seasoning)
  • 1/4 teaspoon black pepper (for seasoning)

Cooking

  • 1 tablespoon olive oil
  • Lemon wedges, for serving

Instructions

  1. Prepare Seafood Filling: In a medium bowl, thoroughly combine the chopped shrimp, lump crab meat, softened cream cheese, breadcrumbs, mayonnaise, Dijon mustard, garlic powder, paprika, chopped parsley, salt, and black pepper. Mix until the filling is homogeneous and set it aside.
  2. Shape and Season Salmon Fillets: Preheat your oven to 190°C (375°F). Using a sharp knife, carefully create a pocket in the center of each salmon fillet without cutting all the way through. Season both sides and inside of the pockets with salt and black pepper to taste.
  3. Stuff and Secure Salmon: Evenly fill each salmon pocket with the prepared seafood stuffing. If necessary, secure the openings with toothpicks to prevent the filling from coming out during cooking.
  4. Sear Stuffed Salmon: Heat the olive oil in an oven-safe skillet over medium-high heat. Place the stuffed salmon fillets in the skillet and sear for 2 to 3 minutes per side, until the exterior is lightly browned and crisp.
  5. Bake to Finish: Transfer the skillet with the seared salmon to the preheated oven. Bake for 12 to 15 minutes, or until the salmon is opaque all the way through and the stuffing is heated.
  6. Plate and Garnish: Carefully remove the skillet from the oven. Serve the stuffed salmon fillets on plates, accompanied by fresh lemon wedges to squeeze over the top for added brightness and flavor.

Notes

  • Use fresh lump crab meat and cooked shrimp for best flavor and texture.
  • When slicing the pocket in salmon, be gentle to avoid cutting all the way through the fillet.
  • You can substitute mayonnaise with Greek yogurt for a lighter option.
  • Make sure to use an oven-safe skillet for seamless transfer from stovetop to oven.
  • Remove toothpicks before serving.
  • Serve with steamed vegetables or a fresh green salad for a complete meal.
