Instructions

  1. Preheat and Prepare Baking Tray: Preheat your oven to 200°C (400°F). Line a large baking tray with parchment paper and set it aside.
  2. Melt the Cheese: In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 20-second intervals, stirring between each, until the cheese is mostly melted. Remove from microwave and whisk until smooth and combined. Allow the mixture to cool slightly.
  3. Prepare the Dough: Transfer the warm cheese mixture to a food processor. Add the almond flour, baking powder, and one egg. Pulse the mixture until a thick and consistent dough forms.
  4. Knead and Shape Buns: Lightly dust your work surface with almond flour. Transfer the dough onto it, and using slightly wet hands, knead the dough several times to smooth it out. Divide the dough into 6 equal portions. Roll each portion into a ball, place on the lined baking tray, and gently press each ball down to form a thinner bun shape resembling a burger bun.
  5. Brush and Add Toppings: Whisk the remaining egg and brush it over the tops of the buns. Sprinkle sesame seeds on top if desired for added texture and taste.
  6. Bake: Bake the buns in the preheated oven for 14 to 17 minutes or until they turn golden brown on top.
  7. Cool and Serve: Remove buns from the oven and let them cool on the tray for 5 minutes before slicing in half and serving.
