Ingredients

Scale

Toffee Base

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons water

Topping

  • 1 cup semi-sweet or milk chocolate chips
  • 0.5 cup chopped nuts (pecans, walnuts, or almonds)

Instructions

  1. Prepare the Baking Dish: Line a 9×13-inch baking dish or a baking sheet with parchment paper or a silicone mat to prevent sticking and ensure easy removal of the toffee.
  2. Combine Ingredients: In a heavy-bottomed saucepan, add unsalted butter, granulated sugar, salt, and water over medium heat. Stir constantly to combine and dissolve the sugar evenly.
  3. Cook to Hard Crack Stage: Continue stirring and cooking the mixture until it reaches the hard crack stage (approximately 300°F or 149°C). This is when the toffee is set and brittle once cooled.
  4. Pour Toffee: Remove the saucepan from heat immediately and carefully pour the hot toffee mixture onto the prepared baking sheet, spreading it evenly.
  5. Add Chocolate Topping: While the toffee is still warm, sprinkle the chocolate chips evenly across the surface. Let them sit for about 2 minutes to soften and melt, then spread the chocolate into an even layer with a spatula.
  6. Sprinkle Nuts: Evenly sprinkle the chopped nuts over the melted chocolate and gently press them in to ensure they stick well.
  7. Cool and Set: Allow the toffee to cool at room temperature for about 2 hours until completely set and firm before breaking into pieces for serving.

Notes

  • Using unsalted butter allows full control over the final saltiness of the toffee.
  • Monitor the temperature closely to avoid burning the sugar; using a candy thermometer is recommended.
  • For added flavor, try substituting vanilla extract with almond extract.
  • Store toffee in an airtight container at room temperature to keep it crisp.
  • Chocolate type can be adjusted according to taste preference—semi-sweet for richer, darker notes or milk chocolate for creaminess.
  • Be cautious when pouring hot sugar mixture as it can cause severe burns.
