Oatmeal Cups
- 3/4 cup smooth peanut butter
- 1/3 cup honey
- 3 cups traditional oats
Chocolate Topping
- 5 ounces dark chocolate, chopped into pieces
- 1 tablespoon coconut oil
- Flaky sea salt, for topping
- Prepare the Peanut Butter Mixture: In a small saucepan, heat the peanut butter and honey over medium-low heat, stirring frequently until the mixture is warm but not hot. Alternatively, microwave in short intervals, stirring to prevent overheating.
- Combine with Oats: Add the oats to the warm peanut butter and honey mixture. Stir well until all the oats are thoroughly coated and combined.
- Form the Oat Cups: Evenly portion the oat mixture into a 12-cup silicone or non-stick muffin pan, using about 1/3 cup per cup. Firmly press the mixture into the base of each cup to form a compact cup shape.
- Melt the Chocolate: Rinse the saucepan, place it back on the burner, and add the dark chocolate and coconut oil. Heat over medium-low, stirring frequently until the chocolate is fully melted and smooth. Remove from heat.
- Top the Oat Cups with Chocolate: Spoon approximately 1 tablespoon of the melted chocolate onto each oat cup. Spread to cover the top evenly.
- Chill and Serve: Transfer the muffin pan to the freezer and chill for at least 1 hour or until firm. To serve, remove the oat cups from the pan, sprinkle with flaky sea salt, and enjoy immediately. Store leftovers in the freezer.
Notes
- For easier removal, use a silicone muffin pan.
- You can substitute almond butter for peanut butter if preferred.
- Adjust the amount of honey for desired sweetness.
- Store oat cups in an airtight container in the freezer for up to 2 weeks.
- Let the oat cups sit at room temperature for a few minutes before eating if too firm from chilling.
