Main Ingredients
- 1 tablespoon extra virgin olive oil
- 1 onion (finely diced)
- 6 cloves garlic (minced)
- 1.5 pounds ground turkey (or beef, chicken, or pork)
- Salt (to taste, approx. 1/2 teaspoon)
- Pepper (to taste, approx. 1/4 teaspoon)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 15-ounce jar salsa
- 1 4-ounce can diced green chiles (drained)
- 1 15-ounce can black beans (drained)
- 1 cup frozen corn
- 2 cups cooked rice
- 4 ounces Monterey Jack cheese (about 1 cup)
- 4 ounces cheddar cheese (about 1 cup)
- Fresh cilantro (optional, for garnish)
- Heat the oil: Heat the olive oil in a large, deep skillet over medium heat until shimmering to prepare for sautéing the vegetables.
- Cook the onion: Add the finely diced onion to the skillet and cook, stirring often, until softened and translucent, about 3-4 minutes.
- Add garlic: Stir in the minced garlic and sauté for about 30 seconds to release its aroma.
- Brown the turkey: Add the ground turkey along with salt, pepper, chili powder, cumin, and smoked paprika. Cook, breaking up the meat into smaller crumbles, until it’s no longer pink, approximately 5-7 minutes.
- Add veggies and beans: Stir in the salsa, drained diced green chiles, black beans, and frozen corn. Cook for another 1-2 minutes until everything is warmed through.
- Mix in rice: Add the cooked rice and mix thoroughly to combine all the ingredients evenly.
- Add cheese: Evenly top the mixture with Monterey Jack and cheddar cheeses.
- Melt the cheese: Allow the cheese to melt naturally on the stovetop, or if the skillet is oven-proof, place it under a broiler for 1-2 minutes, watching carefully, until the cheese melts and begins to brown.
- Garnish and serve: Garnish with freshly minced cilantro if desired, then serve hot for a comforting meal.
Notes
- You can substitute ground turkey with ground beef, chicken, or pork as desired.
- If you don’t have cooked rice ready, plan extra time to cook 2 cups of rice beforehand.
- Using an oven-proof skillet allows for a nicely browned cheese topping under the broiler.
- Adjust the chili powder and spices to your preferred heat level.
- Fresh cilantro is optional but adds a bright fresh flavor to complement the dish.
