Instructions

  1. Cook Quinoa: Prepare quinoa according to package instructions using your preferred method such as stovetop, rice cooker, or Instant Pot until fluffy and fully cooked. Set aside to cool slightly.
  2. Steam Broccoli: In a pan or pot, add ½ inch of water and bring to a boil. Place broccoli florets on a steaming basket or directly in the water with a lid on, and steam for 3-5 minutes until they are bright green and tender in the center. Drain any excess water.
  3. Prepare Casserole Mixture: Preheat your oven to 350°F (175°C). Lightly grease a deep 9 x 9 inch baking dish with oil or non-stick spray. In a large mixing bowl, combine the cooked quinoa, cooked chicken, steamed broccoli, egg, chicken stock, half of the shredded cheese, dried basil, dried oregano, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  4. Assemble and Bake: Transfer the mixture into the prepared baking dish, pressing it down evenly. Sprinkle the remaining shredded cheese over the top. Cover the dish with foil and bake in the preheated oven for 40 minutes. After 40 minutes, remove the foil and bake uncovered for an additional 5-10 minutes to allow the cheese on top to brown and become bubbly.
