  • 500 grams lean beef mince
  • 23 medium potatoes
  • 2 tablespoons olive oil, divided
  • Cheese, regular or dairy-free, as desired
  • Pickle slices, as desired

Burger Sauce

  • 1 tablespoon ketchup
  • 1 teaspoon Dijon or yellow mustard
  • 1 teaspoon pickle juice (from pickle jar)
  • 4 tablespoons mayonnaise
  • ½ teaspoon smoked paprika

Instructions

  1. Prepare the spice mix: In a small bowl, combine salt, onion powder, black pepper, dried oregano or mixed herbs, smoked paprika, and garlic powder. Stir well and set aside.
  2. Prepare the potato chips: Wash and slice the potatoes into thin chips. Pat them dry thoroughly using paper towels to remove moisture. Place the potato slices in a large bowl, drizzle with 1 tablespoon of olive oil, then sprinkle half of the prepared spice mix. Toss everything together until the chips are evenly coated.
  3. Cook the chips: Arrange the coated potato chips in a single layer on a baking tray. Bake at 200°C (390°F) for 30–40 minutes, turning occasionally, until they are crisp and golden brown. Alternatively, cook the chips in an air fryer at 200°C for about 20 minutes until crispy.
  4. Cook the beef mince: While the chips bake, heat the remaining 1 tablespoon of olive oil in a frying pan over high heat. Add the beef mince and break it apart as you stir. Sprinkle the remaining half of the spice mix over the meat. Cook until the beef darkens and any released liquid evaporates, ensuring the mince is well-seasoned and browned.
  5. Make the burger sauce: In a small bowl, combine ketchup, Dijon or yellow mustard, pickle juice, mayonnaise, and smoked paprika. Mix thoroughly, then taste and adjust seasoning if desired.
  6. Assemble the bowls: Divide the crispy potato chips evenly into serving bowls. Add a layer of shredded lettuce on top, followed by the cooked beef mince. Add cheese and pickle slices as desired. Spoon over the prepared burger sauce to finish. Serve immediately.
