  • 1 tbsp Worcestershire sauce
  • ¼ tsp freshly ground black pepper

  1. Melt Butter: In a large frying pan, melt the butter over medium heat until fully melted and slightly bubbling.
  2. Sauté Shallots: Add the finely chopped banana shallot to the pan and cook for 3–4 minutes, stirring occasionally, until the shallots are softened and translucent.
  3. Add Garlic: Stir in the minced garlic and cook for an additional 1 minute, allowing the garlic to release its aroma without browning.
  4. Add Cream and Cheese: Pour in the double cream and add the crumbled Stilton cheese. Reduce the heat to low and stir continuously for about 5 minutes as the cheese melts and the sauce thickens. Use the back of your spoon to break down the cheese into a smooth consistency.
  5. Season Sauce: Stir in the Worcestershire sauce and freshly ground black pepper to incorporate their flavors evenly into the sauce.
  6. Finish and Serve: Serve the sauce immediately while warm, or let it simmer on low heat for a few more minutes to thicken further, stirring regularly to prevent sticking.
