Instructions

  1. Prepare the Overnight Oats: In a medium-sized bowl, stir together rolled oats, ground flaxseed, yoghurt, vanilla extract, salt, milk, and maple syrup if using. Mix well until combined. Cover the bowl and refrigerate for at least 3 hours or overnight to allow the oats to soften and flavors to meld.
  2. Melt the Biscoff Spread: Place the Lotus Biscoff spread and coconut oil in a small bowl or ramekin. Microwave on high for about 20 seconds until melted. Stir thoroughly to achieve a smooth, runny consistency.
  3. Assemble the Layers: Once the oats have soaked, spoon a layer of the mashed fresh raspberries over the oats. Then carefully drizzle the melted Biscoff and coconut oil mixture on top of the raspberries.
  4. Add Crunchy Topping and Chill: Sprinkle the crumbled Biscoff biscuit over the top layer. Place the assembled oats in the refrigerator for a few minutes to allow the topping to set and slightly harden before serving for the best texture and flavor.
